
TASTING NOTES
Inky purple in color. The aromas are intensely dominated by rich dark fruit. On the palate, the flavors follow the aromas with bright and luscious ripe black plums, cassis, blackberry, dark spices and bittersweet chocolate. The flavors are complemented by an earthy minerality that is distinctive of the vineyard. The wine's complex and balanced flavors continue through the endless finish.
VINEYARD
The eighteen acre Ristow Estate vineyard is located in the hillside along the intersection of Silverado Trail and Oak Knoll, just south of the Stags Leap District. The rocky terrain of this south facing vineyard produces cabernet sauvignon of exceptional intensity and flavor. The grapes for Pedras are selected from the rockiest four acre section of the vineyard.
VINIFICATION NOTES
In October 2007 Cecilia and Wil Harris purchased ten tons of grapes from a carefully selected four acre section of the Ristow Estate vineyard. The wine was made at Laird Family Estate and only indigenous yeast was used during fermentation. Aged in 50% new French oak barrels for twenty-four months, the wine was left on the lees for its time in barrel. 2007 Pedras was bottled unfiltered.
