TASTING NOTES
Intense and bright aromas of fresh plums, blackberry, black currant and dark cherry. The rich black fruit flavors follow the aromas and are complemented by bittersweet chocolate, exotic spices, minerals and subtle toasted oak. The bold flavors resonate through rounded velvety tannins and a long finish.
VINEYARD
All fruit for Pedras Cabernet Sauvignon was sourced from the Ristow Estate Vineyard located in the eastern hillside of the Napa Valley at the intersection of Silverado Trail and Oak Knoll. The extremely rocky terrain of this south-facing vineyard produces distinctive cabernet sauvignon grapes of exceptional intensity and flavor.
VINIFICATION NOTES
Ten tons of fruit was harvested from the most expressive four acre section of the Ristow Estate vineyard in October 2006. The wine was made at Laird Family Estate and only indigenous yeast was used in fermentation. The wine was left on its lees for twenty-four months in French oak barrels of which 50% were new. 2006 Pedras Cabernet Sauvignon was bottled unfiltered and rested in bottle for eighteen months before its release in March 2010.
