2016 Pedras Cabernet Sauvignon
After five years of drought we finally saw some relief in the form of substantial, nourishing rains during the winter months. An early, warm spring prompted an early budbreak, with veraison also starting early in most northern California vineyards. It seemed like 2016
would be another early vintage, until the moderate, steady warmth of summer stretched the ripening season a little longer than expected. We also avoided major heat spikes, which allowed the fruit to hang a little longer and achieve ideal ripeness. The early rains in
October were of no concern since the wines were already happily fermenting in the winery before the first drop fell. We are pleased to report the yields this year were slightly above 2015 and the quality is superb.
Your first couple of swirls will release effusive aromas of ripe black cherry, boysenberry and baking spice, with just a hint of dark chocolate. First sip is round and lush, evolving into complex flavors of ripe summer fruit, and some good old-fashioned black licorice.
Smooth, yet complex, the black fruit core is wrapped in layers of dried tobacco and coffee. The polished finish lingers with sweet vanilla supported by supple tannins.
Made from 100% Cabernet Sauvignon grapes sourced from a historic vineyard in Rutherford close to the Silverado Trail.
